If scripted by Hollywood, Jamin Thompson’s story would be dismissed as trite melodrama: A debilitating inflammatory gastrointestinal disease strikes a promising athlete. After a two year battle with the illness and despite doctors telling him that he would be sick and have to remain on medicine for the rest of his life; he managed to not only beat the affliction but return even stronger to eventually get into the best shape of his life and become an internationally published fitness model.

Up against seemingly incredible odds, he managed to complete a full recovery and shock medical experts. And he did it using only natural, whole foods, and real nutrition.

But the story doesn't end there. Jamin has officially retired from competitive tennis, but his work is just beginning. His experiences inspired a strong passion within him to educate people about proper nutrition and how to live a healthy lifestyle. So in 2009, Jamin launched a new health, nutrition, fitness and lifestyle website called PerfectBodyRx.com.

NUTRITION

BISON LETTUCE WRAPS (makes 2 servings)

8oz ground bison
2 large lettuce leaves
2 tablespoons lime juice
2 tablespoons low-sodium beef broth
1 small onion, chopped
1 clove garlic
1 teaspoon red pepper flakes
1/2 bell pepper
2 teaspoons low sodium soy sauce
Sprinkle of thyme, black pepper, basil, parsley, sage, & ginger

Directions:

1. Brown the ground bison meat in a skillet with the red pepper flakes, thyme, black pepper, basil, parsley, sage, & ginger. When the meat is cooked, drain the excess fat.

2. Stir in the lemon juice, broth, pepper, onion, garlic, and soy sauce. Set on a low heat and simmer for 5 minutes or until the liquid evaporates completely.

3. Spoon the meat into the lettuce leaves 4. Wrap the lettuce around the meat and enjoy.
